INGREDIENTS JOKE
1 kg 1/2 of fine flour 500 G of lump sugar crushed finely with the mortar 75 G of brewers' yeast 3 spoonfuls with soup (mixture of roasted sesame and anise) out of seeds 4 or 5 gum arabic grains crushed with 1/2 spoonful with salt 1 coffee melted butter tea glass 1 water tea glass of flower of orange tree more or less according to the capacity for absorption of the flour
PREPARATION
To take half of the filtered flour first of all, to salt slightly, add 50 G of brewers' yeast diluted in a little water and to wet until obtaining a paste a little less consistent that bread dough. To knead this paste vigorously. To place in a container. To cover, place close to a heat source and to let raise 2 to approximately 3 a.m.. Once raised paste, to replace it on the table, with it to mix the remainder of filtered flour, crushed sugar, the 25 other grams of brewers' yeast, to add the melted butter, the water of tepid flower of orange tree, mixed anise and sesame seeds, crushed gum arabic and to knead vigorously this mixture. To quickly form then balls of the size of a fist and to flatten them by making them pass from a palm of the hand to the other in order to approximately obtain kinds of small round loafs of 1 cm thickness. To lay out, progressively, on a cover covered with a clean linen. To cover warmly and leave two to approximately three hours. To check if the paste is raised, by gently inserting the finger in a roll. The paste is raised when after having withdrawn the finger, it regains its shape first. To coat then, rolls of egg yolk to the brush, to prick �diff�rents places with the fork and to put at the furnace.
