Traditionally, one uses the boned thin lamb taken in the leg to make these skewers. The ingredients below are appropriate for 4 people by holding account that a Moroccan meal comprises many services. In dish of resistance, double the quantities for 4 people and are used with a semolina (couscous) cooked for the bubble. If you do not find in your butcher of the grease of kidney, you can replace it by a piece of bacon (bacon). Preparation - to mix all the ingredients; - ideally, it is preferable to let all the ingredients rest together 2 hours at ambient temperature or several hours with the refrigerator;
- to distribute the apparatus in 4 portions;
- to alternate on the skewer the cubes of lamb and grease of kidney;
- to deposit on the grill and to make cook 5 with; 7 minutes on each side.
