Skewer (Qodban) of lamb marinated with spices Print E-mail


Traditionally, one uses the boned thin lamb taken in the leg to make these skewers.

The ingredients below are appropriate for 4 people by holding account that a Moroccan meal comprises many services. In dish of resistance, double the quantities for 4 people and are used with a semolina (couscous) cooked for the bubble.

If you do not find in your butcher of the grease of kidney, you can replace it by a piece of bacon (bacon). The taste will be different but quite as delicious

If the rosy lamb is loved, one will cook skewers 5 min. each side; in Morocco, the meat is cooked and one counts 7 min..

 

Ingredients for 4 people

 

1 kilo of lamb cut in cubes of 2,5 cm
1,5 kilo of grease of ox kidney cut out of dice of the same size as the meat
juice of a lemon
125 ml of oil
salt, pepper
2 C with S. of curcuma, parsley
1 C with tea of powder ginger, curcuma
1/2 C with tea of cumin

Preparation

  1. to mix all the ingredients; - ideally, it is preferable to let all the ingredients rest together 2 hours at ambient temperature or several hours with the refrigerator;
  2. to distribute the apparatus in 4 portions;
  3. to alternate on the skewer the cubes of lamb and grease of kidney;
  4. to deposit on the grill and to make cook 5 with; 7 minutes on each side.
