INGREDIENTS (for 2 people)
500 gr of lamb or beef tender meat 250 gr of white beans 1 onion 2 tomatoes peeled and diced 1 tsp of cumin 4 Tbsp of tomato paste Olive oil A pinch of saffron Salt, pepper
PREPARATION
Put all the ingredients in a casserole: the meat, white beans, thin slices of onion, tomatos dices, spices, tomato paste and olive oil. Cover the beans with water and close the pot. Let the beans cook on medium heat for approximately 30 minutes. Once beans are cooked, turn down the heat, uncover the pot and let the sauce reduce. Note: If you are using raw white beans (not from a can) soak them in water the night before.
